What is Apple Slab Pie

Everyone here should already know what an Apple pie is, and I am not talking about just the movie. Apple Slab Pie is a variation on apple pies that use an Oblong baking pan instead of a traditional pie pan. Oblong Baking pans are rectangular cooking pans, and some other desserts that use them are brownies for example. 

The reason to go for an Apple Slab Pie instead of a traditional apple pie depends on how many people you are feeding. For example, I grew up with 10 siblings and we make 1 apple slab pie instead of 2 traditional apple pies. 

What do you need to make an Apple Slab Pie 

Here are the list of ingredients I find best for a 15x10x1 oblong baking pan:

  • 9-10 cups of sliced apples (about 9-10 medium sized apples)
  • 1 cup of sugar
  • 3 tablespoons cornstarch or all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½  teaspoon ground nutmeg 
  • ½  teaspoon salt
  • 1 medium sized lemon squeezed 
  • 4 premade pie crust

*For the crust, you will have two options. Either buy pre-made pie crust (I recommend), or make your own pie crust. 

If you are buying your pie crust. Look for refrigerated pie crusts in the frozen food section, some popular brands are Pillsbury and Marie Callender’s. Make sure you buy enough pie crust as the bottom of the tray will need 2 overlaps and another 2 to cover the apple filling. 4 crust in total. 

How to make the pie

Once you have all the ingredients here are the easy steps to make the slab pie. 

  1. Preheat the oven 425°F.
  2. Roll out crusts, stacking them one on top of another and make a 18×12 inch rectangle. Fit the dough into a 15×10 inch pan, pressing firmly, stretching if needed in the corners and sides to get fitted.
  3. This is a really easy recipe! Throw all the ingredients in one of your mixing bowls, give it a good stir and pile it into your cake pan or pie crust. It’s going to come out great!
  4. Pat the crust down with a fork, then roll it out to create a 18×12-inch rectangle. Place this on top of the apples. 
  5. Pinch the edges of the crust together to seal if needed and then crimp or flute them as desired.
  6. Place in the oven for about 30-35 minutes, until the apple filling is tender and the crust is browned. 
  7. If needed, you can loosely cover the pie with aluminum foil after 10- 15 minutes of baking, to prevent too much browning. 
  8. Allow to cool at least 2 hours before serving. 
  9. Slice into 4 rows by 4 rows
